Thai Spring Rolls Recipe

Coming at you with another recipe for the freaky fans that are looking for something a little lighter. 
These Thai Spring Rolls are the perfect light appetizer or meal that is extraordinarily fresh tasting with bright and colorful ingredients. They are extremely easy to make with simple to find ingredients, minimal prep time and easy assembly. The only thing extra that is needed is a bottle of Horror Struck's Lament Configuration Hot Sauce. The ginger in the sauce really pops with the fresh ingredients. 
Ingredients:
  • 1 package spring roll rice wrappers (found in the Asian section of your grocery store)
  • 1 package vermicelli rice noodles (also found in the Asian section)
  • shredded carrots
  • red cabbage - shredded or chopped thinly
  • 1 pound shrimp boiled or cooked chicken
  • fresh basil leaves
  • fresh cilantro 
  • bibb lettuce
  • Bachan's Original Japanese BBQ Sauce
Instructions:
  • Cook vermicelli noodles in boiling water, for just a few minutes, according to package instructions. Drain and rinse with cold water.
  • Boil raw shrimp until bright pink with a tablespoon of salt in the water
  • Organize all topping ingredients together, including chopped veggies, herbs, cooked shrimp.
  • Add 1 inch of water to a large, deep dish, or pie pan. Place one rice wrapper into the water and let soak for just 10-15 seconds. It should still feel pretty firm and slightly tacky and place on a plate for assembly plate. (If you let it soak for too long it will get too soft and will tear when you roll it up.)
  • Layer a bit of each veggie and a small leaf of lettuce, a few shrimp, a few leaves of each herb and a pinch of noodles on the ⅓ of the spring roll that is closest to you.
  • Layer generously with Horror Struck Hot Sauce Lament Configuration
  • Fold the sides of the spring roll in over the ingredients. Then pull the side closest to you up and over the ingredients, sealing everything together tightly, and rolling it up like a burrito. 
  • Fill a ramekin of Bachan's Original Japanese BBQ Sauce for dipping
Between the bright spicy flavor of the ginger in the Lament Configuration and the salty and rich flavor of the Japanese BBQ sauce for dipping, these spring rolls don't require any seasoning and you feel a bit better about filling up on this dish!
